Just got this in my email & had to save it, I always seem to have an abundance of canned fruit.
"Instant" Sorbet
Servings: 2
Ingredients:
1 Can(s) Peaches; juice packed
Directions: Take a can of juice-packed peaches or pineapple. Freeze
it for several hours. (That's right, just put the can in the
freezer!) Open and dump frozen contents into food processor with
metal chopping blade in place or into a blender. Process until
desired consistency. Enjoy! Note: You can also do this with frozen
bananas. I find this is a good way to use them this time of year when
they get over-ripe so quickly. Freeze them* in "zip-lock" type bags -
peeling them when frozen can give you frostbite! They end up very
creamy--like very rich ice cream...but with no added fat,sugar,
etc... *w/o peels

Frugal Drink Recipes
I picked up an ice shaver at a yard sale, so now I am looking for ways to use it (besides the obvious margaritas). I've used it once so far to make a snow cone for the Princess!
Iced Mocha Latte Even with the half-n-half it's still cheaper than the coffee house.
Honey Lemonade, not sure how frugal (read cheap) with the honey, but sounds excellent!
Clearly I am still looking, an it hasn't gotten used much because of the recent chilly spell, I'm sure by the end of summer I'll have whipped up many new icy things to share!!!

Cranberry Apple Bread
I would double this recipe. I would probably not add 4 cups of apples though, maybe 3. I'd also add my flaxseed, or maybe some puree of carrots. I'd also use regular eggs since we don't use the eggbeater stuff.
Cranberry Apple Bread
1 1/2 cups of all-purpose flour
1 1/2 teaspoons of baking powder
1 teaspoon of ground cinnamon
1/2 teaspoon of baking soda
2 cups of peeled; cored, chopped apples
3/4 cup of sugar
2 tablespoons of vegetable oil
1/4 cup of Egg Beaters Healthy Real Egg
1 cup of fresh or frozen cranberries
1/2 cup of chopped walnuts, optional
Mix flour, baking powder, cinnamon and baking soda; set aside. Mix
apples, sugar and oil in medium bowl. Stir in Egg Beaters. Add flour
mixture; stirring just until moistened. Stir in cranberries and
walnuts if desired. Spread batter into greased 8 1/2 x 4 1/2 x 2
1/2-inch loaf pan. Bake at 350ºF. for 1 hour or until toothpick
inserted in center comes out clean. Let stand in pan 10 minutes.
Remove from pan; cool completely on wire rack.
Serving Size: 12
Nutrition Information per serving (without walnuts): 143 calories, 3 g
total fat, 0 g saturated fat, 0 mg cholesterol, 61 mg sodium.

Chocolate Cherry Merlot Brownies
I must be in a mood, because reading this recipe makes me want to run out, buy all the ingredient, make them s & then eat the entire pan. But, at $4.21 a gallon, sanity & logic win!
Chocolate Cherry Merlot Brownies

Preparation - 20 min | Cooking - 33 min | Yields - 16 brownies
Sweeten the moment with this unique, wine lover's dessert. Bursting with merlot-soaked cherries, these fudgy brownies are bound to spark passion.
Ingredients:
* 1 1/4 cups (6-oz. pkg.) dried sweet cherries, chopped
* 1/2 cup Merlot wine
* 8 oz. NESTLÉ CHOCOLATIER™ 53% Cacao Dark Chocolate Baking Bar(s), broken into small pieces
* 1 1/3 cups all-purpose flour
* 1/2 teaspoon salt
* 1 cup granulated sugar
* 1/3 cup butter, softened
* 2 large eggs
* 1 teaspoon vanilla extract
Directions:
PREHEAT oven to 350º F. Grease 9-inch-square baking pan.
MICROWAVE dried cherries and wine in small, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute. Set aside for 15 minutes, stirring occasionally. Drain cherries; discard wine.
MICROWAVE small chocolate pieces in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. If pieces retain some of their original shape, microwave at additional 10- to 15-second intervals, stirring just until melted; cool to room temperature.
COMBINE flour and salt in small bowl. Beat sugar and butter in medium mixer bowl until well mixed. Add eggs and beat until light and fluffy. Beat in melted chocolate and vanilla extract. Stir in flour mixture until blended. Stir in drained cherries. Spread into prepared pan.
BAKE for 33 to 37 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack. Cut into bars.
NOTE: Sweetened dried cranberries can be substituted for the dried cherries.

Odd Post
Thankfully I haven't had a need to buy work boots for a while now. Although I am thinking if we do much more in the way of home repair/renovation I may be wishing i had my old steel toes on.
Even being a secretary I still had to have a pair under my desk. You never knew when you were going to have to walk around out there. If there was a chance you'd have to stray outside the yellow lines you had to have them. I used to have a pair of sneakers that the guys would always have to step on because they didn't believe they were steel toes!
I love Meunster cheese, this will be going on next weeks menu plan.
Grilled Cheese Sandwich Pie
1 Egg
3/4 c Flour
1/2 ts Salt
1/8 ts Pepper
1 ts Oregano
1 c Milk
2 1/2 c Meunster cheese, shredded
2 c Ham, crumbled bacon, diced
Mushroom
Peppers
In a small mixing bowl, combine egg, flour, salt, pepper, and half of
milk. Using a rotary beater, beat until smooth. Add remaining milk and
beat until well blended. Stir in 1/2 of the cheese and the ham or
bacon and pour into a well greased 8-inch pie pan or 2 quart baking
dish. Bake at 425F for 30 minutes. Sprinkle remaining cheese over top
and bake just until cheese is melted (2 minutes)

Chicken & Biscuits
Part of this weeks Menu Plan
Sunday we were at a Chicken BBQ and of course neither me nor the Princess can finish a half a chicken so we had leftovers.
I took the leftovers off the bone (about 2 - 3 cups)1/3 of an onion chopped & sauteed
1 can cream of mushroom soup
1 can cream of celery soup
1/2 container of sour cream
Assemble in a crock pot. Cook 5-6 hours.
Using my Whole Wheat Flaxseed Baking Mix I will make biscuits to serve this on. You could also make the biscuit batter & put spoonfuls into the pot with about a half an hour left of cook time for dumplings (check to make sure the centers are cooked).

Spaghetti & Meatballs
I thawed 3 packages of ground (approximately 3 pounds), tossed them in the KA, added 2 eggs, 2 handfuls of oatmeal, 3 handfuls of baby spinach chopped fine, 1T onion powder, 1T garlic powder. It mixed for a while. I stopped it, took out about 1/2 to make the burger patties we will be grilling
Friday sometime. Then I added in 1T of dried oregano & let it mix longer.
Rolled the meatballs, put them in a baking dish & microwaved them until they were done.
I put them in a large casserole dish with a jar of spaghetti sauce, 1/3 of an onion chopped & sauteed, and 1 large can of crushed tomatoes. When it's time I'll just cook up some pasta & dinner will be all set.

Cheesy ham and mac

1 box pasta I used small shells
1/3 of an onion chopped I chopped and suateed a whole onion for the 2 other dishes I made.
1 can evaporated milk
2 cups shredded colby jack cheese
1 - 2 cups cubed ham
8 oz peas I tossed the peas in with the shells the last minutes of cooking.
Boil the pasta. Add peas at the end of the cook time. Drain
Sautee the onions in butter until soft, add the can of milk. Simmer until warm then add the cheese, stir until melted.
Mix the pasta, ham and cheese mixture together in a casserole, serve warm. I had to reheat in the microwave, because the kids weren't ready to eat when I was ready to serve!
