I made 2 batches of the Chocolate Peanut Butter Dream Bars. They look fantastic, and all of the separate parts tasted so good I can't wait to taste them together!
Just a few of the eggs we made.
I also made 2 batches of the Moms Thanksgiving Sweet Potatoes. I used apples sauce instead of the pineapple, and tossed in some mini marshmallows. I think I might make a brown sugar topping for them, but maybe not.
Happy Easter to all!!!

Sunday Link Fest & TNT French Onion Soup
Chocolate Peanut Butter Dream Bars from 100 cafe street - OMG!!!! These are going to my next potluck with me.
Easter Eggs without the box - OK too late I picked up a couple boxes at the Dollar Store, but I love the links to all the different styles.
Make it from scratch carnival is always a good source of ideas, recipes & crafts.
I made French Onion soup this week, of course I didn't use any recipe I have here...
This made 3 LARGE bowls, which was perfect for us because my kids wouldn't eat this! I'd double this at least if I needed more.
1 large onion sliced into crescents
4 Tbsp Butter
2 cans Beef Broth
1 pkg Onion Soup Mix (I didn't have any consume on hand)
2 cups water
2 tsp thyme
Caramelize the onions in the butter in a stock pot/large sauce pan, this took about 1/2 an hour. Add broth, water, soup, and thyme to the onions. This simmered for a while, probably a couple hours on low to soften the soup mix onions & cook the liquids down a little. Before I served I tasted & it was a little salty so I added in a little more water.
Scoop into oven proof soup bowls (or in my case my extra large coffee mugs), top with croutons or bread or toasted baguette slices & provolone cheese slices. Broil until the cheese is bubbly & just browning.
I used a dark multi grain baguette I grabbed off the day old rack at our Wal-Mart, it added a little different flavor to the soup. I really like this soup, but the cheese makes it! Lots & lots of cheese.

Awesome Chocolate Muffins - TNT
My daughter got this recipe playing a Holly Hobbie game on nickjr.com. We will make these again, they were easy & taste so yummy!
Chocolate Muffins
1 3/4 c flour (we sub-ed in 1/2 c whole wheat flour)
1 cup sugar
1/2 c cocoa powder
2 t baking powder
1/4 t baking soda
2 eggs
1 c milk
1/2 c melted margarine
1/2 c chocolate chips
1. Preheat oven to 375 degrees, grease or line with paper cup liners a 12 muffin pan
2. Combine flour, sugar, cocoa, baking powder & soda, and salt. Whisk to blend
3. Add the eggs, milk & melted butter. Stir until just blended. Stir in chocolate chips. Spoon batter into prepared cups. Top with a few chocolate chips and I sprinkled the tops with sugar as well.
4. Bake 18 to 20 minutes, or until a toothpick comes out clean (check close, it could be chocolate chip instead of batter).
5. Cool on a wire rack for 5 minutes

Apple Cinnamon Pancakes - TNT
The kids ate a ton of these! It smelled very fall like in the kitchen while they were cooking. Which is perfect because it's only 60 degrees today.
Apple Cinnamon Pancakes
Ingredients:
3 cups water
1/4 cup dry milk powder
4 eggs
2 1/2 cups all-purpose flour
1/2 cup whole wheat flour
4 t baking powder
1 t salt
2 t ground cinnamon
1 15 oz. can applesauce
Put all ingredients into mixing bowl, whisk together until almost smooth.
For each pancake, pour 1/4 cups of batter on hot griddle, bake over
medium heat, turning when bubbles appear. Serve with butter and syrup.
I usually use less than 1/4 cup for each pancake, that makes nice kid sized pancakes.
