I braised these in a combo of Niagara grape juice (home made) & apple juice, some onion flakes & salt & pepper. I had the oven on 275 & wrapped them in foil before I poured in the juices. I would have used a wine but we were out. These were in the oven about 5 hours. Then I brushed them with some BBQ sauce & put them under the broiler for a couple minutes just to get them sizzling!

Cream Puffs
I made these a week ago, the end result didn't last long enough for a picture! I split them, filled with a "pie" pudding filling & dipped the tops in microwaved chocolate frosting from a can. YUMMY!!!
Cream Puffs:
1/2 c butter
1 C water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs
Preheat oven to 425 degrees F (220 degrees C).
In a large pot, bring water and butter to a rolling boil. Stir in flour and salt
until the mixture forms a ball. Transfer the dough to
a large mixing bowl. Using a wooden spoon or stand mixer, beat in
the eggs one at a time, mixing well after each
Drop by tablespoonfuls onto an ungreased baking sheet.
Bake for 20 to 25 minutes in the preheated oven, until golden brown.
Centers should be dry.

Crab Cake Casserole
I adapted this from a crab cake recipe, so if you wanted to portion & fry this it would be a tasty crab cake appetizer recipe! I used regular yellow mustard, and salad dressing not Mayo.
Of course I didn't have seafood seasoning so I had to sub a MYO recipe (follows), minus the ground bay leaves, I didn't have any!
Crab Cake Casserole
1 lb. Lump Crab Meat
1/4 cup chopped parsley
3/4 cup butter crackers, crushed, divided
1 large egg
3/4 tsp. Worcestershire sauce
3/4 tsp. lemon juice
4 T Parmesan grated cheese
3/4 tsp. seafood seasoning
3/4 tsp. Dijon mustard
1/2 cup mayonnaise
1/4 cup butter, melted
Combine the egg, Worcestershire sauce, lemon juice, seafood seasoning, Dijon mustard, Parmesan cheese and mayonnaise in a bowl. Place the crab meat, parsley, and Ritz crackers (minus 2 T) into a separate bowl. Mix very lightly to combine. Add the wet ingredients to the crab mixture and combine lightly. Portion into 4 single serve buttered casseroles or one casserole dish. Mix rest of crackers & melted butter, top casserole, sprinkle with Parmesan cheese & Broil until heated through.
Seafood Seasoning - MYO
1 T Black Pepper
1 T Dry Mustard
2 T Celery Salt
1 1/2 T Ground Bay Leaves
1 1/2 t Nutmeg
1 t Ginger
1 t Paprika
1 t Cayenne Pepper
Process all in a food processor, store air tight.

Sneaky Healthy
Having watched Oprah this week I was eager to try to use some of the ideas from the Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food written by Jessica Seinfeld. I was planning on making a baked ziti type dish for dinner. Our lacking nutritional element is fiber, so I went to my cupboard to check labels. I found a can of butter beans, 7 g per serving with 3 servings per can. Not going to fill our daily requirements, but maybe...
So I tossed the rinsed beans, the last chopped red pepper from the garden & a little water into the blender. I then added it to the tomato sauce, seasoned it the way we like it, extra garlic. Then made my baked ziti as usual.
No one noticed! Don't mind the evil laughing...

Pizza Dough Abm
1/2 T Yeast
3 1/4 C Flour
1 T Sugar
1/2 T Salt
1/4 C Olive oil
1 1/8 C Water
-----TO SHAPE PIZZA-----
Corn meal
Bring all ingredients to room temp and add to bread maker.
Select "white dough" cycle and press Start.
At end of cycle, remove dough and divide into halves. Preheat oven
to 450. Roll or shape into pizzas on surface dusted with cornmeal. Add
toppings of choice and bake 15 minutes on bottom rack, to make sure crust gets
done.

was easy to work with and stretched well; I even played "Italian pizza
maker" and threw the thing into the air to stretch it. We had company for

Easy-Cleanup Chicken Parmesan--3 Ingredients
I made "this" the other night. I used sauce I had & only shredded mozzarella but it was yummy! I actually got the idea from our school lunch menu! Gotta love big chicken nuggets!
Easy-Cleanup Chicken Parmesan--3 Ingredients
Woman's Day--1-2-3 Dinner
SERVES 4

Total: 20 min
1 box (16 oz) frozen,breaded chicken patties
1 cup fire-roasted tomato & garlic pasta sauce
1 cup shredded mozzarella & Asiago cheese with roasted garlic
1. Heat oven as chicken package directs. Line a rimmed baking sheet
with foil.
2. Place patties on baking sheet; bake 5 minutes less than package
directs.
3. Spoon 1/4 cup sauce over each patty; top with 1/4 cup cheese. Bake
5 minutes, or until cheese melts.
Per serving: 286 cal, 28 g pro, 19 g car, 1 g fiber, 10 g fat (5 g sat
fat), 80 mg chol, 751 mg sod
Different Takes
• Stir 1/4 cup sliced olives and 1 tsp capers into the pasta sauce.
• Substitute thin slices of mozzarella for the shredded cheese blend.
• Serve with pasta tossed with more of the pasta sauce, or with a
green salad.

during the raisin-bread cycle, or five minutes before the final kneading is
finished.

60 Minute Rolls
I haven't tried this one yet, but I have been looking for a roll recipe that is quick & easy since my bread machine kicked the bucket...
60 Minute Rolls
1 cup milk
1 cup water
1/4 cup margarine
4-5 cups all purpose flour
3 T sugar
1 tsp salt
2 pkgs. yeast
Combine milk, water and butter in a saucepan. Heat over low heat until
liquid is very warm to the touch, about 120 degrees.
In mixer bowl, place 3 cups of the flour, along with the remaining dry
ingredients. Mix on low speed until well blended. Gradually add the
warm milk mixture. Mix until well blended.
Gradually begin adding the remaining 1 to 2 cups of flour, until the
dough is firm. Knead dough a few times.
Place in a large greased bowl and allow to rise in a warm place for 20
minutes. Divide into rolls or loaves. Place bread in a warm place and
rise for another 30 minutes.
Bake in a 425 degree oven for 10-12 minutes or until golden brown.
Brush with butter.
