Having watched Oprah this week I was eager to try to use some of the ideas from the Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food written by Jessica Seinfeld. I was planning on making a baked ziti type dish for dinner. Our lacking nutritional element is fiber, so I went to my cupboard to check labels. I found a can of butter beans, 7 g per serving with 3 servings per can. Not going to fill our daily requirements, but maybe...
So I tossed the rinsed beans, the last chopped red pepper from the garden & a little water into the blender. I then added it to the tomato sauce, seasoned it the way we like it, extra garlic. Then made my baked ziti as usual.
No one noticed! Don't mind the evil laughing...
