English Muffin Bread (oven)

I made this the other day, so I took a picture! I used 2 long loaf pans instead of 2 regular loaf pans (use what you have right!). I could have gotten a taller loaf if I had only used one, so I'm noting it here, then I won't forget next time I make it!!!



2 pkg yeast (4 1/2 tsp)
6 Cups Flour
1 Tbs Sugar
2 tsp Salt
2 Cups Milk
1/4 tsp Baking Soda
1/2 Cup Water
Cornmeal

Combine 3 cups flour, yeast, sugar, salt & baking soda in a large bowl. Heat liquids in medium saucepan until 120 degrees F. Add to dry ingredients & beat well. Mix in rest of flour to make a stiff batter. Grease 2 loaf pans and sprinkle with cornmeal. Spoon batter into pans. Cover with a clean dish towel; let rise in a warm place ~ for 45 minutes. Bake at 400 F for 25 minutes. Remove from the pans imediately and let cool.

~To have a warm place for the bread to rise I turn my oven to 200 F, place an inch or two of hot water in a metal pan. Put the pan in the oven on the bottom rack & then turn off the heat. Put the loaf pans on the rack above the water filled pan, still covered with the towel & let rise for 45 mintues.

It is easier to freeze slices layered with wax paper, cut the slices to fit in your toaster, than the whole loaf.

This bread is excellent just as it is, but it is amazing toasted with butter & honey or jam.

I am constantly looking for things, I think I waste more time than the average person. It's not that I am so unorganized, it's that either it gets moved or I don't remember the safe place I put it...

I don't know anymore... I am looking for a little tranquility. It isn't in my house anywhere, that's for sure!!!

Carnival of the Recipes #135

Blabber Heads is hosting the Dinner & a Movie edition of the Carnival!

She opens with the scene from Return of the King where the Rohirrim are about to charge on the Orcs attacking Gondor... (my dorkiness is out for all to see this morning!) Not my all time favorite scene from the movies (meaning the 3 Lord of the Ring Movies), but if you don't get goosebumps...well something is wrong!


I can't wait to get to some of the recipes... I have a lot of rebuilding

The Carnival of the Recipes Irish Edition

I may not be Irish, but I do so love Shamrock Shakes & St. Patty's Day parties! I could live without the corned beef, just not my thing! But I am looking forward to reading the other submitted recipes!

It is going to take me FOREVER to rebuild my recipe database so bear with me, our harddrive crashed & it's gonna cost us big time to have it cracked! Thank goodness I have put up the recipes I have... don't know what I'd do if I had lost all of them!

Corn Bread failure

I had aspired to have pictures of my first attempt at skillet corn bread. However the attempt was a complete failure. I used an online recipe & I refuse to post it here! It wasn't that it was bad, it just wasn't great! I think I need to play with the ingredient ratios a bit & try again. It wasn't as moist as I thought it should be. It was also on the grainy/savory side. I love sweet corn bread (I make the copy cat Chi-Chis sweet corn bread recipe lots). I think that it was a good recipe, but bland for it's lack of sweetness, maybe some savory spice or even jalapenos or green chiles would have been better. We ate it, drowning in margarine & it is nearly gone, so I guess it couldn't have been THAT bad!!!

I couldn't have taken a picture of it anyways, I forgot before I took it out of the pan & the center ended up sticking...it was a sad sight!!!

I am craving corn, maybe I'll whip up some scalloped corn for tonights side dish...yum!

Vegetable Medley - Crockpot

Vegetable Medley
4 Cups diced peeled potatoes
1 1/2 cups frozen whole kernel corn
4 medium tomatoes, seeded and diced
1 cup sliced carrots
1/2 chopped onion
3/4 Teaspoon Salt
1/2 Teaspoon Sugar
1/2 Teaspoon Dill weed
1/8 Teaspoon pepper

Combine all ingredients in a slow cooker. Cover and cook on on low for 5 to 6hours or until vegetables are tender. Yield 8 (1 cup each) serving Perserving Calories: 116 Fat: 1g (sat: trace) Fiber: 4g Chol: 0 Sod: 243mg Carb:27g Prot: 3g WW POINTS – 2
